I make all of my preserves in small batches. This might mean that I only make a few jars at a time, but it also means that they are extra tasty! I also stick to the following principles as much as I can:
* I only use locally grown fruit and veg when they are in season. No using tasteless supermarket-bought imported strawberries in April when I can wait until June when they are ripe and red and tasty, and available from our local PYO! If we have a glut of fruit or veg in our garden, then it's likely I'll preserve that and if friends or neighbours have a glut, I'm more than happy to take any surplus off their hands! I give a jar or two back of the finished preserve in return for the fruit or veg donation.
* If a certain ingredient isn't grown locally - such as citrus fruits and mangoes, I'll buy them from local suppliers.
* I compost all fruit and veg peelings and brown paper used for the tags.
* I recycle and re-use as much as possible, and encourage customers to return their empty jars, so that I can wash them, replace the lids and use them again. For each jar returned, I give 30p off their next jillicious purchase.
